Chocolate Peanut Butter Fondant Mug Cake (Keto)

Ready in under 5 minutes, you don’t need to spend hours baking to get a decadent treat for Valentine’s Day… or any other day! I quickly whip up and enjoy this sugar-free, grain-free and vegan mug cake throughout the year.

Ingredients

2 Tbsp almond flour
2 Tbsp unsweetened almond milk
2 Tbsp Fatso peanut butter (or all natural peanut butter)
1 Tbsp golden monkfruit sweetener
1 Tbsp cocoa powder
Pinch of salt

Directions

In a mug or ramekin, combine all ingredients and mix well.

NOTE: If using an all natural peanut butter, you may wish to add an extra Tbsp of unsweetened almond milk, as the Fatso brand peanut butter is usually thinner.

Microwave for 1 to 2 min, depending on how “fondant” you want to mug cake.

NOTE: I prefer only 60 sec in the microwave, which yields a very soft and creamy mug cake. You can then microwave at 20-30 sec intervals, until you reach your preferred consistency.

Enjoy the peanut butter chocolate fondant mug cake as-is, or top it with a spoonful of keto vanilla ice cream to serve it “à la mode”.
