Kale Parmesan Salad

This kale parmesan salad is simple and still packed with flavour, combining the crunch of toasted almonds, fresh parsley and salty parmesan shavings. It’s a delightful way to enjoy your greens!

Ingredients

4 cups kale, shredded
1 cup fresh parsley, chopped
1/2 cup parmesan shavings
1/4 cup sliced almonds
1 tsp extra virgin olive oil

Dressing
1 Tbsp extra virgin olive oil
1 Tbsp lemon juice
1 tsp balsamic vinegar
1 garlic clove, minced
Salt and pepper, to taste

Directions

In a small pan, toast the sliced almonds over medium heat. Stir frequently and remove from heat as soon as they start being golden, to prevent burning. Set aside.

In a small bowl, whisk together the ingredients for the dressing. Season to taste with salt and pepper, and set aside.

In a large bowl, combine the kale and fresh parsley. Drizzle with 1 tsp of extra virgin olive oil and massage the greens until tender, about 1 min.

Add the toasted almonds, parmesan shavings and dressing, then mix well.

Serve along with the main of your choice and enjoy!
