Keto Bobotie

Our family has always loved eating foods from around the globe and I have a lot of fun adapting them to my keto lifestyle.

This South African bobotie recipe is a must try! Spiced meat and crunchy almonds, topped with an egg mixture make this a warm and comforting dish.

Ingredients

2.2 lbs (1 kg) ground beef
1 cup unsweetened almond milk
1/2 cup almonds
1/4 cup and 1 Tbsp almond flour, divided
2 large eggs
1 small onion, finely chopped
2 Tbsp curry powder
2 Tbsp lemon juice
1 Tbsp psyllium husk powder
1 Tbsp avocado oil
4 bay leaves
1 tsp ground cumin
1 tsp ground turmeric
1 tsp dry oregano
1 tsp kosher salt
Optional: 1/4 cup dehydrated berries, chopped

Directions

Preheat oven to 350F.

In a small bowl, combine curry powder, turmeric, cumin, oregano and kosher salt. Set aside.

In a large bowl, mix together the ground beef, almonds, 1/4 cup of almond flour, onion, psyllium husk powder and lemon juice. Optionally, add dehydrated berries. Set aside.

NOTE: Tradionally, bobotie is made with dry raisins, which I like to substitute with dehydrated raspberries. I prepare these by placing fresh raspberries in my dehydrator for 3-4 hours, then use them in recipes.

In a large skillet over medium-high heat, warm the avocado oil.

Add the spice mixture and toast for about a minute, stirring continuously.

Add the ground beef mixture and sautee until browned, about 5-8 min, stirring frequently and breaking down the meat.

While the meat is browning, in a medium bowl, beat together the almond milk, remaining 1 Tbsp almond flour and the eggs. Set aside.

Once the meat is browned, transfer to a large baking dish, spread evenly and even out the top.

Pour the egg mixture over the ground beef, then top with the bay leaves and, optionally, a few almonds.

Bake 45-50 min, until the egg mixture is set and golden.

Serve with side of choice, such as cauliflower ice, salad, curried vegetables, etc.
