Keto Chorizo Omelette

A little spicy chorizo goes a long way and adds tons of flavour to any dish!

This chorizo omelette is a popular choice in my home for any meal of the day.

Ingredients

6 large eggs
1 chorizo, diced
1/3 cup green bell pepper, diced
1/4 cup onion, diced
1/4 cup mozzarella, grated
2 Tbsp 35% cream
1 Tbsp extra virgin olive oil
Salt and pepper, to taste

Directions

Preheat oven to 350F.

In a large ovensafe pan or skillet, heat the chorizo over medium heat. Once the chorizo begins releasing its oils, add the onion and sautee 2-3 min.

Add the bell pepper and olive oil, stir and sautee another 3-5 min, until the vegetables soften.

In a large bowl, whisk together the eggs, cream, mozzarella, and season to taste with salt and pepper.

Pour the egg mixture into the skillet, give it a gentle stir and let it cook until the omelette begins to bubble, about 3-5 min.

Transfer the pan or skillet to the oven and bake 20-25 min, until the top is golden.
