Keto Scotch Eggs

Keeping to my egg-theme πŸ₯š for the long Easter weekend. πŸ‡

We were gifted an Instant Pot with an air fryer function and these keto-fied scotch eggs are the very first thing I made in it! Stay tuned for more air fryer recipes, LOL!

Ingredients

7 large eggs
0.5 kg ground beef
1/4 cup almond flour
2 Tbsp psyllium husk powder
1 Tbsp avocado oil
3 tsp paprika, divided
1 tsp onion powder
Salt and pepper, to taste

Directions

In a medium pot, place 6 large eggs and cover them with about 1 inch cold water. Add 1 Tbsp salt to the water, which usually makes peeling the eggs easier.

Bring the water to a boil over high heat. Once boiling, cover the pot, remove from heat, and set aside to let the eggs to cook 10-12 min.

While the eggs cook, prepare the meat and breading.

For the meat, in a medium bowl, mix together the ground beef, avocado oil, 2 tsp paprika, onion powder, and season to taste with salt and pepper.

For the breading, in a small bowl, mix together the almond flour, psyllium husk powder, 1 tsp paprika, and a pinch of salt and pepper.

Once the eggs are cooked, run them under cold water. Peel them and place on a paper towel to catch excess moisture.

Flatten about a sixth of the meat mixture between your hands. Place one of the hard-boiled eggs in the center and wrap the ground beef around it. Use both hands to genly press the beef around the egg and even it, then set aside. Repeat for each of the eggs.

Whisk up the remaining egg in a small bowl. Dip each of the beef-coated eggs in the whisked egg, then roll them in the breading and place in the air fryer basket.

Once all the scotch eggs are coated and placed in the air fryer, following device instructions, air fry for 15-18 min at 400F. Turn the scotch eggs over about 10 min into the air frying cycle.

Serve with your choice of side.
