Keto Spinach and Chorizo Quiche

This spinach and chorizo quiche on cauliflower crust was a hit, even with my picky kiddo! πŸ‘Œ

Ingredients

Crust
1 1/2 cups cauliflower rice
1/2 cup mozzarella, grated
1 large egg
1 tsp onion powder
1 tsp salt
1/2 tsp pepper

Filling
1 cup mozzarella, grated
1 cup spinach, chopped
1/3 cup chorizo, diced
1/4 cup 35% cream
3 large eggs
1/2 tsp salt
1/2 tsp pepper

 

Yields: 6 servings
Per serving: 3 net carb*

Prep time: 10 min
Cook time: 50 min
Total time: 1 hour

Directions

Preheat oven to 350F.

First prepare the crust, by mixing together the riced cauliflower, egg, mozzarella, onion powder, salt and pepper.

Press the cauliflower dough into the bottom of a greased pie pan and bake for 20 min.

While the crust is baking, prepare the quiche filling. In a large bowl, whisk together the mozzarella, spinach, chorizo, cream, eggs, salt and pepper.

Once the cauliflower crust is slightly golden, remove it from the oven and pour the quiche mixture into it. Return it to the oven to bake for another 25-30 min, until the top is slightly golden.
