Quick BLT Salad (Keto)

Who doesn’t like a good BLT, right?!

This salad is a breeze to make and will satisfy that BLT craving for sure!

Ingredients

2 cups lettuce, chopped
6 slices of bacon
1 coconut wrap
1 small vine tomato, diced
2 tsp mayonnaise
2 tsp extra virgin olive oil
1 tsp dijon mustard
Salt and pepper, to taste

Directions

Preheat oven to 350F.

Spread the bacon out on a baking sheet, preferably with a drip pan. I like to line the drip pan with a sheet of aluminium foil for easier cleanup. Bake for 20-30 min.

In a large bowl, mix together the mayonnaise, olive oil, dijon, salt and pepper to prepare the dressing.

Add the lettuce and tomato, toss together and divide between 2 bowls.

When there are 10 min left for the bacon, place the coconut wrap (I use the ones from NUCO) in the oven. You can place it directly on the oven grate. Allow 5-10 min to crisp up.

Once the bacon and coconut wrap are crispy, remove from the oven. Chop them up coarsely or just crumble them over the salads, and enjoy.
