Quick Egg Salad (Keto)

One of the things I like to keep handy in my fridge is hard-boiled eggs. They are perfect for a quick snack, salad-topper or to throw together this quick egg salad.

Ingredients

6 large hard-boiled eggs
1/4 cup mayonnaise
2 Tbsp fresh parsley, chopped
1 Tbsp scallions, chopped
Salt and pepper, to taste
Optional, for serving: baby spinach, keto crackers

Directions

In a medium bowl, mash the hard-boiled eggs.

Mix in the remaining, then season with salt and pepper, to taste.

Serve with a handful of spinach or other green, and a few keto crackers.

If you do not have hard-boiled eggs ready, just place fresh eggs in a small pot. Cover with cold water, until there is about an inch of water aboce the eggs. Salt generously. Bring the water to a boil over high heat, then cover, remove from heat and leave for 12 min. Rinse the eggs in cold water and peel them.
