Quick Saag Paneer (Keto)

Being a lover of Indian food, sometimes I just need that quick fix. This quick saag paneer recipe is ready in just minutes and still packed with spices!

Ingredients

1 pkg (500g) frozen spinach
1 pkg (350g) paneer, cubed
1/4 cup 35% (heavy) cream
1/4 cup water
2 Tbsp onion, minced
2 Tbsp butter
1 Tbsp lemon juice
1 Tbsp fresh ginger, minced
1 garlic cloves, minced

Spice mix
1 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp cayenne pepper
Salt and pepper, to taste

Directions

In a small bowl, mix together the spices and set aside.

In a large skillet, melt the butter over medium-high heat. Add the onion, garlic and ginger, and sautee 2 min.

Add the spice mix, and sautee 1 min to release the fragrance.

Add the frozen spinach, cream and water to the skillet. Bring to a simmer, stirring occasionally, and cook for 10 min.

Stir in the cubed paneer and allow to heat through, about 5 min.

Remove from heat and stir in the lemon juice.

Enjoy as-is, or serve over konjac or cauliflower rice.
